THE STORY BEHIND THE SAUCE
Crafting Curryo
Curryo was my third creation. I wanted a green sauce, but I refused to make just another generic blend. Here is the story behind the flavor.

The Green Sauce Dilemma
It started with a simple observation: I was missing a green sauce in my lineup.
But when I looked at the market, I noticed a pattern. Green sauces were almost exclusively Jalapeño-based. To me, that felt uninspired. I wanted that vibrant green color, but with a completely different personality. It had to be unique.
An Indian Twist
The inspiration came from Indian cuisine. I decided to combine fresh green peppers with aromatic curry spices.
To perfect the depth of flavor, I introduced turmeric. It provided a warm, earthy note without compromising the bright green look I was chasing. It was close to perfect, but the texture still needed work.

The Secret Ingredient
Vegetables alone didn't provide the smooth consistency I was looking for. The solution was unexpected: Kiwi.
Fruit naturally creates a silkier texture than vegetables. The kiwi locked in the vibrant color and added a zesty freshness that balances the spices perfectly. It transformed a good sauce into something exceptional.
Love It or Leave It
Here is the honest truth: Curryo is a "hit or miss" sauce. It wasn't designed to please everyone - it was made for curry lovers.
"It is fresh, aromatic and specific. If you are not a fan of curry, this might not be for you. But if you are? It might just change how you eat tacos and seafood."
